I’d recommend a lot of Junji Ito’s work.
I also read a lot of short mangas so feel free to look through my completed list and you’ll find quite a few.

Here are some 1/2 volume length shonen/seinen I liked:

Watashitachi no Shiawase na Jikan

I hesitate suggesting 3-5 volume and longer works as, though they are binge-worthy, it does get exhausting to read them in just one day. But if that's your thing, I might suggest a couple more.

I just finished Oyasumi Punpun. It's a cute, bittersweet story that I think was a nice read.

Lovely Strange Dark scanlates lots of great short manga and oneshots, you should check them out!

Aside from that, here are some bingeable, completed series:

Wakusei Closet - Sci-fi thriller with great characters, world-building, and a twist end

Goth (Novel) by Otsuichi, which I also like, but I think the manga does a better job of rearranging & streamlining the stories to make them flow together more smoothly.

I'm not really into "short" story, but these are the best I have read :

Oneshot :
Arigatou tte Itte

Around and under 5 volumes :
Tasogare Memorandum

Above 5 and under 10 volumes :
Zense Coupling
